Due the expensive airfare on my disembarkation day, I plan to stay one more day post-cruise. Is it possible to extend one day to my purchased insurance? Otherwise, it won't cover my flight on the last day of my trip if anything happens, right?

Usually, yes, you can add a day. Just call your insurer (or go on line if you can modify your policy on line) and change the date & amounts if necessary. You may have to pay an additional premium (not likely but possible), but it shouldn't be a problem.

Have done this and all we did was contact the insurer giving them the new dates. They updated their records and sent a new confirmation showing correct dates.

We have also done this without a problem. However, once your trip begins, I believe that you cannot make changes such as extending your return date.
