Tell guest services that it's tips for the crew and there's never a problem although we've never asked to break anything bigger than a $20. I always go to bank before vacation to get cash and ask for several small bills to tip porters, room service etc. It's part of the pre-cruise ritual! Been doing it since our second cruise. Works out great, one less hassle to worry about while on your cruise. But to answer OP question, GS or the kiosks break large bills.
