Getaway disembarkation?

Yes, in most ports you can use "Easy Walk-Off" program that means that once the ship had been cleared by the officials, you can take all your luggage and leave when ready. Be warned that on disembarkation morning the public areas are often very crowded and getting on to an elevator can be really difficult with all the luggage.

If you choose not to do that, you need to get colored luggage tags from the Giest Services (often on a shelf close by) during the last few days of the cruise and leave the bags outside your cabin on the last night. The tag color specifies the approx time when you can disembark with your carryon luggage and collect your luggage from the terminal.

How soon after the ship gets to port do we have to disembark? Our flight home isn't until the evening, and we're trying to learn how much time we'll need to kill between coming off the ship, and getting onto the plane.

Is there such a thing as "late check-out"? ;)

You need to be off the ship by about 10am at the latest, and should be out of your cabin about 8.30 so you would be waiting in the public areas.

There is no such thing as a late check out, if you have a lot of time to kill there is typically an "excursion" that ends up at the airport mid afternoon. we did that in Seattle and it was very convenient an a great tour. It beat the heck out of killing 7 hours at an airport.

Is there an option to keep your luggage somewhere, or are you expected to bring it along on the excursion?

The excursion is done on a coach and your luggage will travel with (or actually underneath) you.

You can see the excursions here (you need to click "more" for each excursion to see if it is available to disembarking passengers):
