Can be cool onboard. Hotter and humider as you go south. Traditionally north bound is is going to be bumpier because you are going against the California/Alaskan current. Loved Puerto Vallarta, walked into town ourselves during the day public transport back with locals and trip to an island with traditional show and dinner on the beach watching the sunset :) Mazatlan we did a city tour and show (saw the divers) and Cabo we went snorkelling (Sea of Cortez) guide was great allowing us to touch all sorts of sea life then markets back on shore and relaxing port side. Loved it all! Yes we are lucky in Australia with the best beaches especially where I live but when I travel I love to experience the differences in culture and the country.
