does Holland America have assigned check in times?

No. Just show up at least 90 minutes before sailing..

90 minutes is the minimum time for check-in - they can refuse to allow boarding if less than this. HAL usually starts boarding about 11 or 11:30 am.

We like to get to the pier by about 10:45.

Boarding usually begins at 11:30. You will be given a number either at the door or once you check in -- depends on the port.

HAL tries to have the cabins ready by 11:30 so that you can drop off your carry-ons and do whatever you want -- go to lunch, tour the ship, etc.
