Don't know about Malta but Athens and Ephesus are doable by taxi. Keep in mind however that the port is a distance from these sites. If you are docking in Kusadasi you are about a 20 minute ride from Ephesus. You will likely dock in Piraeus for Athens which is also about a 20 minute ride away. You might want to consider some kind of a transfer service booked in advance. If you take a taxi be sure to negotiate the price first.

@JoeyyyycruiserI am from Malta. Yes our port is only down the road from Valletta capital City (within walking distance- uphill walk). Taxis available. Always agree on price or use a taxi with a meter. Many other places of interest to see on the island. Also Hop on Hop off buses available :)

We are cruising on October 17th and wondering if there is anything wrong with just getting off the ship and hiring a cab in Athens eupheses and malta and making our own itinery

 

Not at all. We have done the same in Athens and malta. Euphesis, Turkey... I would recommend taking a ship tour, it is aways from the ship, tours generally drop you and you can explore on your own... then return to bus at appropriate time.

Malta:

The new Upper Barrakka lift opened in December 2012, linking the Grand Harbour to the Upper Barrakka Gardens and Valletta city centre. It is located on the original site where its predecessor, which was dismantled in 1983, operated between 1905 and 1973.

 

The lift is 58 metres high and can carry twenty-one people at a time, for a total of 800 per hour. The journey takes around twenty-five seconds, making it the quickest way into the city from the Valletta Waterfront.

 

The lift offers a practical alternative for the thousands of cruise ship passengers who disembark at the Valletta Passenger Terminal to reach the city with its shops, restaurants, churches and museums. It is also possible to combine the ticket for the flift with the ferry crossing across Grand Harbour to or from The Three Cities.
