Ship's Time or Port Time?

Does anyone know - when in the Caribbean for the West Indies Explorer (January 2017) is the Viking "Star" times listed as in port be a "ship's time" established in Miami or San Juan? Or do they add an hour to match each island's time (Atlantic Standard Time)? Would be helpful to know for planning private excursions. Thanks!

The shipboard dailies will remind you to change your watches before going to bed because you will be waking up in a new time zone and the ship will already be functioning on the new schedule. Time zone changes, like daylight savings time, take place overnight and there will be plenty of announcements and reminders.
