Trying to find a beach that limits the amount of people and offers food, launge chairs, drinks part of the package. We did this last year in Cozumel, found a gem, and it was amazing. Sugar Bay (no longer affiliated with Dreams) is really the only AI resort. Bolongo has an AI option. Neither of these will limit their other guests from the beach. Their beach mostly accessible by boat and there's no hotel or condo complex on that beach. I know they have hosted private beach parties in the past. They serve food and beverages.
