Southampton has become so crowded now, 5/6 ships nearly all the time. Why oh why do they not use Harwich once again. So concenient, railway right on the dock, good hotels etc.etc. seems stupid not to use.

Multiple reasons but the key ones are :-

 

Economies of scale. Most of the ships are part of Carnival, so being in one place where their head office makes a lot of sense if things go wrong and support is required.

 

Peak of 5/6 ships occurs only in peak summer months. A pain on those days but highly limited in actual days per year.

 

Travelling time for majority of guests is less to SOU than Harwich.

Like most things, it's probably a financial decision.
