Multiple reasons but the key ones are :-

 

Economies of scale. Most of the ships are part of Carnival, so being in one place where their head office makes a lot of sense if things go wrong and support is required.

 

Peak of 5/6 ships occurs only in peak summer months. A pain on those days but highly limited in actual days per year.

 

Travelling time for majority of guests is less to SOU than Harwich.
