We don't go to N.O. during Mardi Gras, where it is over-the-top crazy, but have been to N.O. several times. Only had one bad meal in the French Quarter. Judging by how it was prepared, I think the chef had just walked out and the other kitchen staff couldn't find any recipe details. one of my favorites is Galatoires, which is on Bourbon St. However, once you're inside you've stepped back in time to a more refined time and service.
