Can you book 3 day dining package before embarkation

We have bought this package but not sure if we can book the restaurants beforehand or if we need to wait until on board.

When booking your package, you will select a time for your dinner the first night in a specialty restaurant we've selected for you. Upon embarkation, you will be contacted by one of our Maitre D's to arrange the rest of your reservations. Or, you could simply go to one of our specialty restaurant reservation desks to reserve the rest. Specialty Dining Packages must be booked at least four days prior to boarding and may not be available for every sail date.

There are some myths and some truths :). In Nov-Dec we took back to back 10 and 11 day cruises on the Reflection. About 3 months before our cruises Celebrity had one of their 20% off sales and I quickly logged-on and bought an 8 meal package for the 11 day cruise and a 6 meal package for the 10 day. Because we did it during a sale our cost per meal was about $25 (we ate 10 of those 14 meals in Murano). When we got aboard there was no information in our cabin about a first night reservation...of even about the package. So we immediately stopped down at Murano (where there was no line) and had the Maitre'd make all of our reservations (for the first cruise). When he looked on his computer it did show we had the meal packages...but the system never assigned any first night reservation for either cruise. This was fine for us since we prefer to choose our own restaurants, days and times.
