For the dining package, it says as "an added perk, you’ll also get to eat lunch in our specialty restaurants on sea days." Does this include embarkation day? I'm guessing not but just wanted to check.

For the beverage package, does it no longer include Red Bull?

If you are on an Oasis class ship, there is usually at least one specialtyrestaurant open for lunch on embarkation day.
