Southern France on a Sunday?

Hi - We are taking an Oceania Cruise this summer and will be in St. Tropez on a Sunday. Currently we have booked a peninsula of hill top villages tour of Gassin, Grimaud and Ramatuelle. All of them look lovely but I am concerned that because these are small towns there won't be much open on Sundays (even when I looked at St. Tropez there were quite a few things that appeared to be closed that day).

Another tour option includes time in Gassin only but combined with a visit to family run winery (instead of the 2 other villages). This I feel might be a good alternative because we can at least be guaranteed to get into the winery and 'do' something that day.

I was just wondering if anyone had any thoughts or if anyone has any advice regarding Southern France on Sundays. Thanks!
