Dock in Savona at 8am-what time to book an onward train?

If you carry your own cases off the ship you can go off 30 minutes after docking.

You do not leave cases outside cabin or use the coloured tags, if you see reception they can tell you roughly what time the night before expected arrival time, & priority disembarkation.

Make sure your account is paid & outside the cabin in the letter rack, you might have to show it at the gate.

I assume you're Australian, but I can't recall what time passports were available for pickup. First passenger off about 1/2 hour after docking, about 1/2 hour for the rest of the cattle stampede. Terminal is designed for two ships, sometimes there are 3 which makes it a bit chaotic if you're not familiar.

You change from Trenitalia to SNCF at Ventimiglia. Last time at Savona, I took the Costa shuttle to Nice gare, saved some hassle and I don't recall it was much more expensive. Departed 10.00 arrived about 13.00 for Marseille departure  about 13.50. (St Augustin is the airport station, not all trains stop there).
