Leaving the ship 1 day before cruise ends

We're thinking of booking a cruise next year that ends in Montreal. We really want to disembark in Quebec City 1 day before the cruise actually ends. Our goal is to spend 1 week post cruise in Quebec. It seems like maybe a waste of time to sail down to Montreal (we've been there a couple of times in the last 3 years) only to turn around and find transportation back to Quebec City. Skip the last night's dinner and entertainment and jump off in Quebec City and boom we're onto the next leg of our Canadian trip.

 

Can this kind of thing be done? Who/How do I contact to set this kind of thing up?
