Specialty restaurants showing available

How soon should the specialty restaurants show available? Mine shows none available. Sailing Dec 12 on Mardi Gras. Would like to book the steakhouse. Also can’t buy water or anything besides room decorations it show.

I'm booked on the 11/14 sailing and mine aren't up either. They haven't listed them yet, I've been watching for quite a while.

If I remember correctly, we were unable to book any specialty restaurants on the Panorma until July 31st/Aug 1st last year.  About 4 months before the inagural cruises.
