Meal suggestion for today - Baked Stuffed Peppers

Love fresh veggies, but not a big fan of fruit tarts or fudge.  I do love a good cherry pie though.

 

My mother made baked stuffed peppers a lot when I was younger and I really liked them but I don't have her recipe.  It was probably better in my memory than it really would be now.  Isn't it funny how our taste buds change over the years?
