We had one P+ dining coupon left over from a cruise a couple of years ago.  It did not have a date, ship name, or cabin number printed on it, so we kept it and were able to use it on another cruise a few months later.  In between those two cruises we were on a different NCL ship where the P+ coupons had the ship name and our stateroom number listed.  We couldn't use our extra coupon there, so we saved it for later.  NCL may be following more stringent protocols now, so you may not be able to do this now.

The system does keep a record of your meals and how they were paid for, so there is the chance that it will flag up if you charge too many to platinum meals. Having said that, it doesn't seem to be a flawless system, as we have had examples where things go out of line and things haven't been charged how they should have been (to our benefit usually).

I seem to recall that the individual platinum coupons identified what specialty restaurants they could be redeemed..... one of the coupons could be used in either Moderna or LaCucina with the other coupon showing LeBistro or Cagneys as the options.  Is this still the case?

Basically, yes, although there are variations due to some ships not having all of those restaurants. The options per ship are detailed on the latitudes page of the NCL website.

  Am I reading this correctly ?     2 platinum in a cabin now share a certificate ? Instead of the old way where each received a 2+2.     

Dinner For Two At Cagney's Or Le Bistro With A Bottle Of Wine6

It used to be that you got one meal for two per person. Now you get two meals for two per stateroom, so the number of meals is the same.

 

You only get wine with one of the meals though.
