Where to find a baleada

I read an article about a Honduran baleada, which is a tortilla stuffed with refried red beans, Honduran cream and cheese.  It made my mouth water and I love trying authentic foods from places I visit.  Has anyone found a really good one?

In case anyone wants more information on them:  https://www.roatanet.com/what-is-a-baleada/

Street vendors or little hole in the wall walk up places are your best bet for authentic. Last time I was on the island the walk up place across from the grocery in Coxen Hole was a favorite.  Two adorable Honduras ladies making them. I like mine with chicken added.
