Any suggestion where to find a clothing list and shopping suggestions for our NL cruise? Does Viking provide such a list?

You did not say when you are going.  Assuming it is the January or February timeframe it is best to dress in layers, waterproof attire as the weather in Norway is quite cold & changeable.

We are going the end of January.

We did this cruise in Feb 2019.  We packed winter jackets, snow pants, long underwear, heavy socks, hiking boots, hats, and gloves.  Good advice to layer.

It's a good idea to layer, make sure you use real wool (merino is best) for your under layers and a good wool sweater is good. Why wool? it will keep you warm even when wet. A light rain shell over the wool layers will will keep the wind and rain out.
