It's my understanding that you can't buy transfers (to or from the ship) within 7 days of embarkation. Even though, disembarkation is way more than 7 days away.

No worries. I asked at Shore Excursions and found out that the first bus would depart at 7am for Schipol. So, I bought a transfer ticket and I was at the airport right before 8am.
