What time can we get off the ship in a port?

We are boarding tomorrow in Athens, but staying in port till 5pm the next day. Can we get off the ship at 7am if we want and go do our thing in town or is there a specific time they open the doors in the morning? Do we have to go through any sort of official procedures at the port, or do we just walk off the ship and grab a taxi? We'd like to get off the ship early and go to the Acropolis as soon as they open to avoid most of the lines...

You should be able to leave whenever you want to leave.

We have similar but in Mumbai next May. There are excursions listed for that second day that start very early on departure day. It's like any other port day.  So simply check your excursion schedule.

When alongside, the gangways must remain in place, but whether they are open is at the discretion of the local authorities. Previous overnight visits to Piraeus we have been able to walk on/off at any time.

In Piraeus at 07:00, the traffic can be rather busy heading into Athens, while only 7 or 8 miles it can take considerable time. Another option is the metro, which has a station about 1 mile from where Viking normally docks.
