Doing a cruise to Dubai with a overnight at the end of the cruise; we dock in at 9:00 am on Saturday and we disembark on Sunday.  Looking at flights back to US

and the one I want flies out at 5:30am so we need to leave the ship at 2:30am on Sunday morning.  Would we be able to do this?

Highly likely, a lot of passengers will start to disembark in the early hours of Sunday morning. Many of the flights leaving Dubai are early morning. That's usually why they overnight in Dubai. The times we've disembarked in Dubai, the disembark itinerary has had the first guests leaving around 1.30am.
