My wife and I got off the Oasis on April 2. It was our first cruise since the craziness went down. We have been on several cruises, but have never taken for granted how blessed we are to have found cruising and having been afforded the opportunity to enjoy it multiply times.  

The new check-in and safety process was great. The food was great. The service was wonderful. Our cabin attendant was awesome. (one service didn't impact us at all. We saw him in the hall several times a day if we had needed anything). The weather was great. We got off in every port. Even if we only found a spot on a beach. We don't have sandy beaches at home, so we have to enjoy them when we can. 

 

For us, nothing beats a cruise vacation!

Cruising restarted August 2021 - you missed a lot.  Like Oasis-class with 1400 passengers.  And dining rooms with nobody else in your waiters' section so they could talk with you throughout dinner.  And tour operators desperate for work.

 

Only got covid once in 17 cruises and it was on the second half of a B2B with testing between halves.

(We didn't plan on cruising that much but kept rescheduling the "two weeks" and they piled up).

My experience is closer to your’s than the OP’s. This Sunday will be my 25th cruise post COVID. While I am glad ships are sailing again at full capacity, it was nice sailing on ships with low passenger counts, no lines any where on the ship and getting upgraded to a suite on my first six cruises for a minimum bid.
