Can you take granola bars through US customs?

Professionally manufactured, cooked, sealed snack food products for personal use (i.e. a few in a pocket, rather than cases of them in your luggage!) aren't a problem - as a diabetic I always travel with some protein bars to maintain blood sugar in case of delays on planes, trains, ships etc., and we have emergency food and water in the car at all times which crosses the border with us 20+ times a year.

As long as you declare it, there's no problem with that sort of snack - fresh fruit, raw seeds/nuts that could potentially be planted and grow are the major concerns, with a secondary issue of importation rules on the amount of things like meat and cheese you can bring (Google 'Canadian cheese smuggling ring' for some idea of just how lucrative illegal imports of US cheese can be!!!!)

What you can't do on a cruise ship is wander off in port with unpackaged stuff you grabbed from the buffet, despite many people assuming that that can do this - which is exactly why it's not just allowed, but a very sensible idea to always have some sealed snacks. Excursions that feed you in AK tend to be very limited in dining time options, long bus rides before you get to the one lunch place everyone uses in tiny town X is pretty normal, so even if you're don't suffer from hypoglycemia etc. it's a good idea to pack some snacks you like.
