Almost all tours to Olympia are the same. (I've done it on several different lines and I imagine O is no different.)

 

You go to the site first. Or if you are doing a tour that includes the site and the museum, you may do the museum first.

 

After you visit the site, you will likely have free time to walk around. There is an entire street of souvenir tat and "Greek" tavernas but you can just spend your time strolling around the monuments longer or sitting in the very pleasant park.
