The conventional wisdom is that the addition of salt brings out the flavour of the other ingredients. That's probably one of the best bits of product marketing I could think of. My taste buds had adjusted to not having salt within about a month and, since then, anything that was "normally" salted, just tastes salty to me. It ruins the flavour of the other ingredients. Pepper is a different story and is probably my most regularly used spice I like ascribing ulterior motives to organizations as much as the next guy but salt bringing out other flavors is pretty well accepted. the same is true of MSG. My cooking group has even performed a number of experiments (not necessarily perfectly scientific but convincing). That being said, Most Americans overdo it on salt; myself included. I also enjoy lots of black pepper and fresh herbs from my garden.
