Not a big deal - we just did all this.  Had a list down (organized) on the tasks to do after the safety briefing.  (Restaurant reservations, booking bridge and galley tours, booking cooking class).  All took about 30 minutes is all.  Then we had a drink to toast our success!  (Viking Mars Montreal)

Yes - that is what we were told when we checked upon boarding.  Guest Services said they'd put us on the wait list and at some point we'd hear if the Captain was going to allow any bridge tours.  After about 4 days we got a call saying yes, it would be 10 AM on a particular sea day (nice weather day too).   The Captain (Mars) was great and quite entertaining!   We even got to see some whales from the bridge.

So yes - nothing is guaranteed on bridge tours.
