When doing the checkin online, can you enter some info and pick a check in time. and then go in at a later date to put in your passport number and credit card? Or does everything need to be put in at the same time, in order to choose a check in time?

You don’t choose a time, per se. you complete the steps and a time will be assigned. That time could change multiple times leading up to your arrival in port. Most people just show up when they want.

Ok, so all the times are assigned when all steps have been completed?

The only steps not required are your photos and credit card information. Those can be taken care of at the terminal (photo) and on the ship (credit card). Everything else must be done. 
 

If you’re sailing on a closed loop US cruise you can simply choose a birth certificate and photo id instead of listing passport info.

My recollection is you never see your assigned check-in hour until you get the docs package emailed to you after the on-line check-in is completed. When you get that package, your assigned time is printed on there. Just ignore your assigned hour and just get to the terminal when its convenient for you based on driving, airport arrival time, train station arrival time, etc.

I have been assigned times at the time of booking.  At that time it was 1100.  Then it changed to 1600.  I usually arrived around 1230-1300.  EM

We just checked in for our February cruise a little over a week ago and at the last step of the process gave us our arrival time. There was a dropdown and we could choose from a set of possible times. We picked the earliest listed, which for us was 12:30 pm. We used the app but have also done it on the website in the past. Our friends who'll be on the cruise with us checked in a few hours before we did but the earliest time shown for them was 1pm, so it seems to be a bit random, not just "first come first served".

 

We'll probably show up about 45 minutes before our listed time because even if they make us wait outside it'll be better than sitting in the hotel lobby.

I will be helping my SIL do her online checkin in a few days.  She doesn’t have a passport.  Does she just use her driver’s license number snd dates?

There’s a drop down for identification type. Use that to find the appropriate field.
