Your sign and sail card will be outside your room when rooms are ready. Most ships it's around 1:30. Anything you charge onboard you use that card. Only time you won't need to show it for paid dining is at say the Steakhouse or Rudi's, etc. because they just charge you automatically. At say the Seafood Shack, you will need to show it because they charge on the spot when you order.

A little clarification- your sail and sign may be used in the casino in the machines, you use it to set up you player bank. Additional tips for drinks may be added directly to the slip and that goes on your sail and sign. If you know the crew member's name and department you can give them an extra tip on your sail and sign by going to guest services.
