Beyond dining

I am considering a cruise on the Beyond and am confused how the dining works. They only have 8:30 dining available. 
The rep said I can eat anytime in any restaurant and getting a table for 2 would not be a problem. This seems inaccurate to me, as if this is the case, what advantage is “anytime dining”? 

What are my chances of getting anytime dining if I am on a waitlist?

The computer system is designed for the older ships so typically has 3 options that show -  anytime, early and late. However in reality when onboard its anytime.

I travel solo so normally get a table for two, I've had no issues getting a table when I turn up
