Can anyone recommend a solid tour provider to take us from LaHarve to the beaches of Normandy?

As above. Overlord are probably the most recommended on these boards. So popular are they that you need to book well ahead to secure them for your date. There should be many reviews of their tours to be found online if you internet search.

 

You could probably find fellow passengers from your sailing Roll Call  to make up the numbers for this small group tour, or maybe one of the others has already arranged a tour with them and looking for others like yourself to join.

and of course only book private tours if they guarantee you to be back in time for your departure as the ship will not wait for you if you should get into a traffic jam...

Any guarantee short of transferring you to your next port (and paying expenses) if you miss your departure is near pointless.  

 

If all they do is refund your tour cost, they have very little skin in the game.
