How Close to Sailing Date Can I Book?

I'm considering a quick 3 day weekend cruise on Paradise (LA to Ensenada) to tide me over between now & my July 7 day adventure aboard the Conquest... I'd like to wait & decide which weekend is best based on the weather forecast since I'm close enough to drive to the pier... does anyone know the latest point at which you can book? ...'May Grey' & 'June Gloom' in S. CA/Baja are always a drag when you're ready for SUN...

I believe that you can book day of sailing if there are cabins available, but, on a three days cruise, it may be 24 to 36 hours prior to sailing because TSA has to get the manifest 96 hours before docking in the US.
