I have never seen anything new added once onboard, it has been the same shore excurisions listed. However only a certain % of the spaces (seats) are set aside for online booking. The remaining spaces are kept for onboard booking.

the same excursions that are listed on the website are, also, in the printed booklet (some people get in the mail a couple of weeks before cruise) and the same ones listed in the sheet you will get in your cabin. the only difference is if they had to change somethings since printing the other lists. on our cruise a couple of tours were no longer available...one due to the distance to get there and back, it didn't work for our port times.

they do hold some for booking on the ship, since many, many passengers have no idea they can book excurisons on-line.

Typically, if it is sold out on the web, it will be as such on board. However, there is always the chance of cancellations, so if there is something you really want to do, get on a waiting list and you may be pleasantly surprised.
