Does the staff position of Social Hostess still exist on the Millennium, or has this position been substituted with something else? I'm talking about the person who arranges the Captain's table invitations, etc.

Sorry to say, the Social Hostess position no longer exists. The position has been merged into the Captains Club Hostess and/or Host, who performs most of the Social Hostess functions. Parts of the position are also handled by the Concierge person onboard.
