Central or eastern time

Does anyone know if the ship times are always in Eastern standard time or do they change to Central time? I'm wondering about Grand Cayman. On the Grand, the itinerary shows the times in GC as 7:00am-4:00pm. I've scheduled an independent excursion & we're supposed to meet no later than 8:00 am central time...just want to show up at the right time. Thanks!

With some rare exceptions, Princess ships operate on local time.

You will see printed notice in the Patter the day before each time change. You may also have a card in your stateroom the evening before the change.
