Nice beach easy to get to from the cruise terminal in San Diego

Take the ferry over to Coronado Island. The ferry departs about a block from where Monarch docks - turn right as you leave the berth and walk to the ticket office that you'll see. Last time I was there (last year) the ferry left every hour or half hour, same with the return. It's about $3/per person each way, a 20-minute ride. You'll be let off in a little shopping/restaurant area, and there's a beach off to your right, as I recall. You'll have boffo views of the city and several nice restaurants to choose from for lunch.

Definitely go with Coronado island over Mission Beach. If you take a taxi (or walk) from the ferry dock, down Orange for a couple of miles you will hit the 'ritzy' part of coronado island with Hotel Del and Coronado Beach (which is public). It's a great beachy town - much prefer it over Mission or Pacific Beaches in S.D.
