It is not in their best interest to make a tourist sick. I live in Cabo part time and have water filtration. I drink water right out of the tap. Very few, if any, establishments still make their ice in-house, instead they buy it in bulk direct from the water purification plant. We've been drinking the tap water and enjoying adult iced beverages in Vallarta for 15 years and have yet to get sick. Most who do get sick suffer from too much sun, too much rich food, too much booze and too little water. Book a food tour and learn how to really enjoy the local food. Enjoy!
