Cape Breton is a large island and is part of Nova Scotia. It is very beautiful. The drive known as the Cabot Trail is particularly famous. However with just a day stop in Sydney you do not have time to drive the entire Cabot Trail or to see the most scenic part (in my view) which is on the west coast.
Here is a document we are working on which gives you more information about options for cruise visitors to Sydney: https://docs.google.com/document/d/1SHnC1bdaKtBLTr9bcJShb3a0escYZQKLWkZF4seT14I/edit

The HO HO bus is very expensive and cannot go on the waterfront walkway. You can take a cab to Citadel Hill and another to the Fairview Lawn Cemetery for less than the bus.

I agree with others that you should go on an expedition trip to Antarctica, meaning a ship which has landings. We went on G Adventures Expedition and it was absolutely fantastic. The ship is comfortable but not elegant like the Azamara ships. The food was comparable though (amazingly!) and the staff who gave the lectures and led the expeditions on land and the zodiac and kayak cruises were outstanding.

I cannot personnaly recommend anything but research shows that Uber is available.

We spent four days in Siem Reap and barely scratched the surface. It is easy to make your own arrangements to go there. There are wonderful places to stay (We loved the boutique hotel Rose Apple) and great restaurants. We had our own tuk tuk driver for four days.

It is quite a distance. You can do a search here or go to Trip Advisor for Quebec to ask about transportation: https://goo.gl/maps/Y1cKgdAyvLy

We had a guarantee verandah our first time and got 783 - absolutely perfect. I would not worry much about being forward. Deck 6 is great for getting quickly to 4 and 5. We used the stairs most of the time, even to go up to 9. Have to work off the fabulous food somehow.

If you can book a junk from Indochina junks to go to the secluded Bai Tu Long Bay you will see beautiful scenery without the crowds.
For sure Hanoi is a long way away but may be worth a peek since you could stay there overnight.
You should also post this on the relevant Ports of Call forum.

Sicily is fabulous, full of historic sites, wonderful scenery and great food and wine. However many things are inland so this would have to have some longer stays to allow people to visit Villa Romana Casale or the Baroque towns or the Valley of the Temples. If the cruise is a couple weeks long this would be fantastic.

That's not quite true when there are multiple ships the same day. Halifax has room for three. I am not sure about Charlottetown and Sydney. I know they are both expanding their ports.
Here are links to information about Halifax and Sydney:

In NS it varies by county but most garbage is put in clear plastic bags (so you can't hide stuff that should be recycled) and then people put the bags in the large boxes to protect them from predators (crows, racoons, etc.) Organics are put in large rolling green bins. Where I live recyclables go in clear bags as well. One week the pick up is for garbage and organics and the next week is for recyclables.

And much as I love the Azamara experience, you do want to land in Antarctica. Go on a smaller expedition type ship.

Yikes! Thanks for the warning.

Try this: https://docs.google.com/document/d/1BjAtDscML-9Ce3VWUUsOrsVhPL7KIxb7Go_9SRi82dE/edit?usp=sharing
The first link is a bitly link. I don't know why it didn't work.

Actually I was wrong about the colours being past peak in NS on the 16th. They were great up to about the 20th. so aim for the second to third week of October. We have just had a lot of wind and some rain and many leaves are on the ground now.

Port times can be quite different. You want the most time in port. Also check where they dock.

The restaurant at Peggy's Cove is decent. You could also check out Rhubarb which should be on the map above. I heard the other day of lobster being sold by the roadside on the Peggy's Cove Road from Peggy's Cove to Upper Tantallon.
-
Google maps suggests you go inland (west first) but I prefer going by Upper Tantallon. There are some shops there and you are by the water. The inland route may be a tiny bit faster so you go that way and return the other.

Notice the routings out of Halifax to avoid some construction. These route are avoiding the Armdale Rotary and the beginning of the St. Margaret's Bay Road.

You cannot properly see the iconic torres on the bus tour. We certainly did not.
-
Interesting. I do not know who it was doing the lobster.
Just one cruise ship in town will lessen the crowd at Peggy's. Try to get there asap.

Here is another map but it does not show every place: https://goo.gl/maps/FrypmVDmGb82
Right on the waterfront walking area from memory are the Waterfront Warehouse (tourist trap), Murphy's on the Water (also a tt but OK for lobster perhaps), Salty's (high end tt). Check reviews by googling Trip Advisor: (name of restaurant)

Here is a tale of what can happen if you do not use a safe. This story is from a friend (A) who was travelling with another friend (B.) They were in a hotel and B would not use the safe. So she hid her credit cards. Of course she forgot where. They were checking out and travelling and she ended up having to cancel the cards. She had put them under the TV where the staff eventually found them, but too late.

That lobster place is Ryers and they are not cooking lobster for the public this year. You can rent a car, hire a taxi or take a tour to Peggy's Cove. It will be crowded if there are several ships in town which there are pretty well every day in October. Here is a link to more information: http://*******/2wJOjW3

Lunenburg is quite a bit further from Halifax than Peggy's Cove. You would want to take the highway there and back which does not allow you to see much coastal scenery. Lunenburg is fabulous.
