We are sailing on 7 Night Eastern Caribbean Cruise on board Celebrity Solstice.

 

Our travel agent told us there would be 2 formal nights -- is that correct?

Yes, there are two formal nights. They usually happen during days at sea. So, your first day at sea and then the last day at sea, unless that day happens to be right before final arrival day. In that case it will be two days before arrival.

Formal nights are not always on the at sea days. I don't know which itinerary you are doing with Solstice but your formal nights will be day 2 and day 6. If you are doing the cruise without the Labadee trip they are indeed on sea days however if you are doing Labadee then the second formal night will be the night you are in Labadee...
