They might have the other meat choices, but it also might be the meat from the night before. Buffet isnt exactly the same choices ever .. at least to me. There is prime rib at the buffet on the 1st formal night. It is at the carving station. If you want it cooked more than what is carved (ie rare -> medium), ask the cook to cook the piece longer for you.
