I am a competition BBQ judge with KCBS and Florida BBQ Association and can tell you that the term BBQ is being used nowadays by everybody because of recent popular reality TV series. I remember them having sliders, different types of quesadillas, chips and dip and some other good stuff. Is was real good...I think they should do this on every ship on sea days. And those unfortunate souls sitting on their private (:rolleyes:) Deck 6 balconies get to 'enjoy' the grill smoke, and the unplanned conversations, for hours, with those passengers standing in that rather long line just a few few feet below them. So, hey, here's a pic showing how slow cooking gives a pink 'smoke ring' to the ribs...one good way to tell it was done slow. BTW, my secret to juicy ribs like these is keep the meat temp from going over 212....need 170 to cook safely and the fat renders to gelatin at about 195...but keep meat from going over 212 and steam forming in each cell....perfect.
