Special Happenings on New Year's Sailings on the Summit?

I have always avoided Christmas & New Year's sailings due to the ridiculous pricing. Well, I am about to bite the bullet and book a trip on the Summit for New Year's 2013 for our 15th anniversary. Can you tell me what special activities happen on the Summit for this sailing?

 

I have seen the countdown on RCCL ships on Youtube in the Promenade. I have seen special dinner menus on RCCL on Christmas Day. It is obvious they will do some sort of countdown celebration on the Summit, but I would like to know what I may expect. Is New Year's Eve a good day for specialty dining or do they go a bit above and beyond in the regular dining room?
