Neither site has the impact of an Ephesus or Pompeii, but both have their own charm and atmosphere. If you are interested more in Greek history (and the history of the Olympic games -- the ancient ones, not the modern ones), then go to Olympia. And if you go, don't miss the terrific small museum on the site. Delos, while it started out as a religious center in the Greek world, has more ruins from the Hellenistic and Roman periods, including some remains of houses with mosaics, a theatre, and lots of remains of monuments. Again, they have a nice little museum on site. Olympia is more shady; Delos is mostly rock and little shade, at least in the areas you'd be walking.
