Booking excursions on board?

I want to book an excursion once I get on board as I want to use OBC. What are the chances of excursions selling out? Do most excursions typically sell out beforehand or are there usually spots available? What has your experience been waiting to book on board?

Totally depends on the excursion. If they can, they'll add more (for instance, more buses) to a very popular itinerary. But, if it's a catamaran tour to an out of the way island, they have as many slots as the catamaran can seat, and that's probably it.
