best month for seeing scenery around the horn

We hope to be able to take the NCL Sun around the horn of South America in either early december 2015 or early jan. or feb. 2016. I understand that the earlier you go the smaller the baby penguins are and that the water is calmer later in the season. But I was wondering about the scenery? Will more of the snow be melted later on making it less pretty? Is it like Alaska where it can be foggy some of the time, especially early and late in the season? I would appreciate any imput you have about this so we can select when to take the trip.
