Amsterdam buffet - self serve or not?

On my recent Oosterdam cruise the Executive Chef told me that they started replacing the serving utensils every 30 minutes in lieu of restricting self service in the first 48 hours....not sure if this is fleet wide.

 

pretty sure it is. I saw them doing that on both the Prinsendam and the Westerdam. There was one person watching as well on the P'dam (can't recall if that was the same on the Westerdam or not) and would replace if he saw anything untoward.

We were on the Zaandam for 2 weeks the end of July. There was no Code Orange. They did serve all the hot foods in the Lido though. The lines seemed to go very slow.
