A PCC has informed me that since it is on the ESCAPE; dining and entertainment can only be made 60 days ahead of the sailing date regardless of your cabin or suite category. Paying the entire cost, although it is well before the final payment due, has no bearing on this policy for this ship. I have without incident purchased a dining package and shore excursion. When you board you will be given a preview of events happening throughout the cruise and you will have no problem booking what you want the first day onboard. I took the advise of the CruiseCritics and booked entertainment and dinning this morning! I did want to pre-book Tappas but it is not available.
