Princess (specifically the Caribbean Princess) offer the service (for a fee of course) to pick-up your luggage from your cabin and then deliver it to the airlines - not to be seen again until we get home?

Yes, it's called EZ Check. It's only offered from certain domestic airports, and it's a wonderful service.

It's called EZ Check and costs $20/pp.

 

You'll receive a form a few days before disembarkation that you fill out with your flight information and drop it off at the Passenger Services Desk. I always bring an extra copy of my e-ticket to attach to the form. You will receive your airline luggage tickets and boarding pass some time after 6pm on the night before disembarkation. You leave your bag outside and don't see it until you arrive at your final destination.

It appears you are sailing from Houston. The only ports I have ever heard EZCheck offered by Princess at are Ft Lauderdale and Seattle.
