Shore excursions recommendations

The reefs around St. Thomas are pretty run down, so the snorkeling is not all that great there. Coki beach has a bunch of Seargent Majors - they like to eat large size Milk Bone Dog Biscuits, btw. Instead, I would go over to St. John and snorkel at Trunk Bay which has an underwater snorkel trail and is a gorgeous beach - inexpensive to get into.

Great Stirrup Cay is NCL's private island, so you don't really have any options there but to do an NCL snorkel tour.
